These energy bites are quick and easy to throw together, no-bake, and free from added sugars… the perfect sweet & salty snack for a busy day!
Makes: 12 bites
½ cup pecans or nut of choice
15 whole pitted dates, roughly chopped
⅓ cup unsweetened shredded coconut
1 tsp coconut oil or oil of choice
1 ½ tbsp cocoa powder
½ tsp salt
1 tbsp water
- Place pecans in food processor and pulse until roughly chopped.
- Add remaining ingredients and process until mixture starts to form.
- Using a tablespoon measure, spoon out mixture and roll into 12 balls.
- Store in the fridge in an airtight container for up to two weeks, or in the freezer for up to 3 months.
