Quinoa & Veggie Salad

Serves: 8


1 ½ cups quinoa, uncooked

2 cups chickpeas

½ cup cucumber, diced

½ cup red bell pepper, diced

½ cup carrots, grated

1 royal gala apple, chopped

¼ cup green onions, chopped


3 tbsp extra virgin olive oil

2 tbsp lemon juice, freshly squeezed

1 garlic clove, minced

1 tbsp Dijon mustard

½ tsp freshly ground black pepper


  1. Cook quinoa as directed on package. When quinoa is cool, transfer to large mixing bowl and stir in remaining ingredients.
  2. Whisk dressing ingredients together. Pour over quinoa salad and mix well. Refrigerate for an hour before serving.

Nutrition Tips

  • If you are using canned chickpeas, drain and rinse the chickpeas very well to decrease the amount of added salt.
  • Make this recipe your own and substitute the ingredients for your favourite vegetables, type of apple and seasonings!
